Sweetcorn Fritters

INGREDIENTS:

  • 50g Crackd® The No-Egg-Egg®
  • 100ml plant based milk.
  • 150g plain flour.
  • 1 tsp baking powder.
  • 260g can sweetcorn (drained weight).
  • 1/4 tsp smoked paprika
  • 1/4 tsp dried parsley.
  • 2 spring onions finely sliced.
  • 1/4 tsp salt
  • 2 grinds of black pepper
  • 2 tbsp vegetable oil for frying

METHOD:

  1. Whisk the Crackd® The No-Egg-Egg®, plant milk, flour baking powder together ( the consistency should be like porridge)
  2. Stir in the salt, pepper, paprika and parsley.
  3. Stir in the sweetcorn and spring onions.
  4. Heat the oil in a pan on a medium heat and add 1 tbsp of the mixture per fritter.
  5. When the fritters are firm and golden flip over and fry for a further 3 minutes or until both sides are golden.
