Cheese and Broccoli Muffins

INGREDIENTS:

  • 60g Crackd® The No-Egg-Egg®
  • 275g self-raising flour
  • 250ml plant milk
  • 200g cooked grated broccoli
  • 75g grated vegan cheese
  • 50g melted vegan butter
  • 4g mixed herbs
  • 1 tbsp juice
  • 1 teaspoon baking powder
  • ½ tablespoon salt
  • ¼ teaspoon pepper

METHOD:

  1. Preheat the oven to 180C  gas mark 4 /160C Fan and line a 12 hole muffin tray with muffin cases.
  2. Sieve the flour, baking powder and salt and pepper into a large bowl.
  3. Mix the butter, Crackd® The No-Egg-Egg®, lemon juice and milk together in a jug.
  4. Add the cheese and mixed herbs into the bowl of dry ingredients and mix well.
  5. Pour the wet ingredients into the bowl and gently stir everything together using a fork.
  6. Divide the mixture equally between the cases and bake in the oven for 25-30 minutes until lightly golden and until the muffins rise.
  7. Remove from the oven and allow to cool. Serve warm or cold.
