TURKISH MENEMEN SCRAMBLE

INGREDIENTS:

  • 1 Tbsp Olive Oil
  • 1 small White Onion, finely diced
  • ½ Green Bell Pepper, diced
  • 1 large Tomato, diced
  • 1 Tsp Smoked Paprika
  • ½ Tsp Dried Oregano
  • Sprinkle of Dried Chilli Flakes or Cayenne Pepper
  • 180 Ml Crackd® The No-Egg-Egg®
  • Fine Sea Salt and Freshly-cracked Black Pepper to taste
  • Garnishes: Sliced Chives or Chopped Parsley, crumbled Feta, sliced Avocado, Black Olives.

METHOD:

  1. Place the oil, onion and pepper in a non stick frying pan and on a medium heat cook for a few minutes until soft.
  2. Add the diced tomato and seasonings and cook for a further 3 minutes to reduce the moisture.
  3. Pour in Crackd® The No-Egg-Egg® and allow to bubble, stirring occasionally until cooked 5-7 minutes.
  4. Before serving sprinkle in the olives and feta cheese.
  5. Place in a bowl garnished with slices of avocado, chopped parsley and either toasted sourdough bread or Turkish flatbread.
