Vegan Doughnuts

INGREDIENTS:

  • 60g Crackd® The No-Egg-Egg®
  • 120g plain flour
  • 70g caster sugar
  • 100ml vegan milk
  • 30g melted vegan butter
  • 1 teaspoon lemon juice
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla extract
  • ¼ t teaspoon salt
  • Toppings of your choice

METHOD:

  1. Preheat the oven to 170C gas mark 3  / 150C Fan.
  2. Place the milk into a bowl with the lemon juice and rest for 10 minutes.
  3. Add the Crackd® The No-Egg-Egg®, vanilla and melted butter and whisk until frothy.
  4. Sieve the flour, baking powder and salt into a bowl, add the sugar and mix well.
  5. Make a well in the flour and pour the liquid into the well and gently fold in until the mixture is smooth.
  6. Lightly grease your doughnut ring and spoon the mixture into the moulds until they are two-thirds full from the top. Place into the oven for 8-10 minutes until lightly golden. Remove from the oven leave to cool on a wire rack.
  7. Decorate your doughnuts with toppings of your choice.
