English Rock Cakes

INGREDIENTS:

125g Vegan Butter
75g Caster Sugar
60ml Crackd® The No-Egg-Egg®
225g Self-Raising Flour
1 Tsp Baking Powder
15ml Vegan Milk
1 Tsp Vanilla Extract Cinnamon (optional)
Mixed Spice (optional)
150g Sultanas

METHOD:

  1. Preheat the oven to 170°C/150°C Fan/Gas Mark 4 and line a baking tray with baking paper.
  2. Stir the vegan butter and sugar thoroughly in a mixing bowl until the sugar is dissolved.
  3. Add Crackd® The No-Egg-Egg® and stir it in the mixture.
  4. Sift in the flour and baking powder and stir until well combined.
  5. Pour in the vegan milk and vanilla extract and mix it in.
  6. Tip in spices if using.
  7. Tip in sultanas and mix it all together until we'll combined into a sticky dough.
  8. Place dessert spoonful’s onto the baking tray with a gap between each, as they'll spread in the oven.
  9. Bake for 20 minutes, longer if needed
