The Ultimate Easy Crème Brûlée

INGREDIENTS:

  • 1/2 cup Crackd® The No-Egg-Egg®
  • 1 cup plus 1 tablespoon vegan cream
  • 1/4 cup superfine sugar
  • 1/2 cup superfine sugar, for the topping
  • 1 teaspoon vegan butter
  • 1 tablespoon cornstarch
  • 1/2 vanilla bean, or 1/2 teaspoon vanilla extract
  • Mixed berries, for serving

METHOD:

    • In a bowl, whisk together the Crackd® The No-Egg-Egg® and cornstarch until smooth.
    • In a small saucepan over low heat, warm the vegan cream, sugar and vanilla until the mixture is very hot and almost comes to a boil.
    • Slowly pour the hot cream mixture into the Crackd mixture, whisking continuously until smooth and slightly fluffy.
    • Return the mixture to the saucepan.
    • Cook over low heat, stirring constantly, for 2 to 3 minutes, until it thickens.
    • Stir in the vegan butter until fully combined.
    • Once the mixture thickens and just begins to bubble, remove it from the heat.
    • Strain through a fine-mesh sieve into 4 small ramekins.
    • Chill until cold.
    • When ready to serve, sprinkle the tops evenly with superfine sugar.
    • Place under the **broiler** briefly until the sugar bubbles and caramelizes. Watch closely so it does not burn.
    • Serve with mixed berries.
