Warm the caster sugar, cream and vanilla into a pan on low heat until the mixture almost starts to boil.
Slowly pour the mixture from the pan into the bowl and whisk until the batter becomes fluffy.
Transfer the mixture from the bowl and place into the pan and bring to a low simmer stirring continuously for 2-3 minutes.
Stir the vegan butter into the pan until fully combined and wait for the batter to thicken. As the batter starts to boil take it off the pan. The mixture is now ready.
Pour the mixture through a sieve into 4 small ramekins and place in the fridge to go cold.
When ready to serve sprinkle the golden caster sugar for the topping over the ramekins and place under a medium grill until the sugar bubbles and turns brown.
Serve with mixed berries on the side.
