The Ultimate Easy Crème Brûlée

About 30 minutes, plus chilling
INGREDIENTS:
1/2 cup Crackd® The No-Egg-Egg®
1 cup plus 1 tablespoon vegan cream
1/4 cup superfine sugar
1/2 cup superfine sugar, for the topping
1 teaspoon vegan butter
1 tablespoon cornstarch
1/2 vanilla bean, or 1/2 teaspoon vanilla extract
Mixed berries, for serving
METHOD:
In a bowl, whisk together the Crackd® The No-Egg-Egg® and cornstarch until smooth.
In a small saucepan over low heat, warm the vegan cream, sugar and vanilla until the mixture is very hot and almost comes to a boil.
Slowly pour the hot cream mixture into the Crackd mixture, whisking continuously until smooth and slightly fluffy.
Return the mixture to the saucepan.
Cook over low heat, stirring constantly, for 2 to 3 minutes, until it thickens.
Stir in the vegan butter until fully combined.
Once the mixture thickens and just begins to bubble, remove it from the heat.
Strain through a fine-mesh sieve into 4 small ramekins.
Chill until cold.
When ready to serve, sprinkle the tops evenly with superfine sugar.
Place under the **broiler** briefly until the sugar bubbles and caramelizes. Watch closely so it does not burn.
Serve with mixed berries.
