Best-Ever Pancakes

At least 1 hour plus chilling
INGREDIENTS:
Makes 6 to 8 Pancakes
1 1/4 cups self-rising flour
1 teaspoon baking powder
1/4 cup Crackd® The No-Egg-Egg®
2 tablespoons sugar
Oil or vegan butter, for cooking
1 cup vegan milk
2 tablespoons melted vegan butter or vegetable oil, optional, plus more for the pan
1 teaspoon vanilla extract
Toppings of choice, such as butter, maple syrup, fresh berries, whipped cream or banana
METHOD:
Sift the self-rising flour and baking powder into a large bowl.
In a separate bowl, whisk together the Crackd, sugar, oil and vanilla until the sugar starts to dissolve.
Add the wet mixture to the dry ingredients and stir. Add enough vegan milk to make a thick batter. Based on the ingredient list, this is about 1 cup.
Heat a **skillet** over medium heat and add a little vegan butter or oil.
Once the pan is hot and the butter is bubbling, drop in 2 to 3 tablespoons of batter per pancake.
When bubbles appear on the surface, flip and cook for another 1 to 2 minutes.
Serve with your preferred toppings.
