Vegan Tiramisu

INGREDIENTS:

    For the Sponge

    • 1/2 cup Crackd® The No-Egg-Egg®
    • 1 cup all-purpose flour
    • 1/3 cup superfine sugar
    • 1/3 cup plus 1 tablespoon plant-based milk
    • 2 tablespoons melted vegan butter
    • 1 teaspoon lemon juice
    • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
    • Pinch of salt

    For the cream layer

    • 1 cup plus 2 tablespoons vegan heavy cream

    • 1/2 cup powdered sugar

    For assembly

    • Strong brewed coffee or espresso, cooled
    • Cocoa powder, for dusting

METHOD:

  • Preheat the oven to 350 F.
    • In a small bowl, stir together the plant-based milk and lemon juice. Let sit for 10 minutes.
    • In a separate bowl, whisk together the Crackd, vanilla and melted vegan butter.
    • In a large bowl, sift together the flour, baking powder and salt, then stir in the superfine sugar.

    • Add the wet mixture to the dry ingredients and mix until smooth.
    • Pour into a lined shallow baking pan and bake until the sponge is lightly golden and springs back when touched.
  • Let cool completely, then cut into strips or squares.
    • Whip the vegan heavy cream with the powdered sugar until thick.
    • Quickly dip the sponge pieces in the cooled coffee.
    • Layer the soaked sponge and whipped cream in serving glasses or a small dish.
    • Finish with a dusting of cocoa powder.
    • Chill before serving.
