Kimchi & Cheese Omelet

INGREDIENTS:
1 1/2 cups Crackd® The No-Egg-Egg®
2 ounces vegan cheese, grated if needed
4 ounces kimchi
Salt, to taste
1 tablespoon vegetable oil
3 green onions, sliced
Black pepper, to taste
To serve: Bread, chopped cilantro
METHOD:
Preheat the oven to 320F
Lightly grease 2 small ovenproof nonstick skillets or 2 8-inch cake pans.
Divide the Crackd® The No-Egg-Egg® mixture between pans
Bake for 15 to 20 minutes, until the omelets are set.
Spoon the kimchi and cheese over the top of each omelet and return to the oven for 2 minutes.
Warm the vegetable oil in a small frying pan over a medium heat and add the sliced green onions.
Meanwhile, heat the vegetable oil in a small skillet over medium heat.
Add the green onions and cook for about 1 minute. Remove the omelets from the oven and fold them over.
Serve with the cooked green onions, salt, pepper and bread on the side. Finish with chopped cilantro.
