Crackd® The No-Egg-Egg® Bites

INGREDIENTS:
1 cup plus 2 tablespoons Crackd® The No-Egg-Egg®
1 ounce vegan bacon lardons
1 ounce vegan grated cheese, divided
1 ounce chopped fresh tomato
1 oz chopped green onion
1 ounce sliced black olives, optional
1 tablespoon cornstarch
1 teaspoon chopped parsley
1/2 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
METHOD:
Preheat the oven to 300F
Lightly grease a nonstick mini muffin pan.
Whisk the Crackd® The No-Egg-Egg® and cornstarch together until light and frothy.
Add the bacon lardons, most of the cheese, tomato, green onion, olives if using, parsley, thyme, salt and pepper. Stir until fully combined.
Spoon the mixture evenly into the muffin pan.
Sprinkle the remaining cheese on top.
Bake for 20 to 30 minutes, or until fully cooked. To test, insert a skewer into the center of a bite. If it comes out clean, they’re done.
Serve right away with a side salad, or enjoy as a snack.
