Bagel Sandwiches

At least 1 hour plus chilling

INGREDIENTS:

  • 1/2 cup prepared Scrambled Crackd®
  • 2 bagels
  • 1 teaspoon vegetable oil
  • 2 ounces greens, such as kale, spinach or chard
  • ½ Lemon
  • Salt and black pepper, to taste
  • Chopped Dill and vegan cream cheese for spreading

METHOD:

    • Prepare the Scrambled Crackd® using the related recipe on the site.
    • Slice the bagels in half and toast them.
    • Heat the oil in a medium skillet over low heat.
    • Add the greens and cook, stirring, until wilted and bright green, about 2 to 4 minutes.
    • Remove the pan from the heat. Season the greens with salt, pepper and a squeeze of lemon.
    • Assemble the sandwiches by layering the greens on the bottom halves of the bagels.
    • Top with the Scrambled Crackd®
    • Spread vegan cream cheese on the top halves of the bagels and sprinkle with chopped dill.
    • Close the sandwiches and serve.
