Bagel Sandwiches

At least 1 hour plus chilling
INGREDIENTS:
1/2 cup prepared Scrambled Crackd®
2 bagels
1 teaspoon vegetable oil
2 ounces greens, such as kale, spinach or chard
½ Lemon
Salt and black pepper, to taste
Chopped Dill and vegan cream cheese for spreading
METHOD:
Prepare the Scrambled Crackd® using the related recipe on the site.
Slice the bagels in half and toast them.
Heat the oil in a medium skillet over low heat.
Add the greens and cook, stirring, until wilted and bright green, about 2 to 4 minutes.
Remove the pan from the heat. Season the greens with salt, pepper and a squeeze of lemon.
Assemble the sandwiches by layering the greens on the bottom halves of the bagels.
Top with the Scrambled Crackd®
Spread vegan cream cheese on the top halves of the bagels and sprinkle with chopped dill.
Close the sandwiches and serve.
